SPAIN - read, eat, pray - ...... 1. TARTA SANTIAGO

my TARTA, just out of oven

I was reading a nice, joyful story (fiction) by BARBARA O’NEAL, 

 “THE GARDEN OF HAPPY ENDINGS”. 

It is about two next-door high school friends, Joaquin and 

Elsa just before they get married decided to take two weeks walking pilgrimage in Spain, called Camino de Santiago = the walk to St. James, walking to the Cathedral Santiago, North of Spain. (SEE  HISTORY NOTE, at the end). 

They came back, they didn’t get married but they brought recipes from Spain and the novel brought the story of their lives….

On the walk to Santiago cathedral,  they had many times 3 dishes, which they loved so much, they put  THE RECIPES at the end of the book, from where I am bringing them to you.


1. TARTA SANTIAGO (from Joaquin, the priest).

2. CALDO GALLEGO - hot white bean soup from Galicia,

                            (from Joaquin, the priest).

3. CHICKEN AND DUMPLINGS (from  ELSA, the reverend). 



my NOTE: 

I  bake this tarte and my grandsons love it! I cut from recipe the quantity of sugar in half and I put some whole almonds around, as a crown, instead of more sugar, powder sugar, on top. But one can have the recipe as it is. 

The reason this is a good dessert for me is that has no white wheat flour, no any kind of cream and still it is a very good dessert. 

I have seen in Spain, going with our tour bus….. thousands of acres of almond trees, which in spring should be a wonderful place of white flowers, and bees, and sun. 


TARTA DE SANTIAGO ( from the end of Barbara O’Neal’s novel, The Garden of Happy Endings).

INGREDIENTS:


2 and  2/3 cups almond flour, fine

1 stick butter (R Temp)

4 eggs

1 and 1/4 cups sugar

3/4 cup flour

1/2 tsp baking powder

1/2 cup water

zest from one lemon

Powdered sugar to decorate





DIRECTIONS:

HEAT OVEN TO 350F.
Grease a round 8” pan (add parchment paper, greased too).

Beat eggs and sugar, add butter, and mix again.

Add flour, and baking powder and beat and mix well.

Add water.

Stir almond flour into it.

Add lemon zest.

Poor batter into prepared cake pan.

Bake in the oven at 350F, about 45-50 min.

The cake is done if a toothpick inserted into the center of it, comes out clean.

CUT OUT A CROSS OF ST. JAMES ( a sword that looks out as a cross) from a piece of paper. Place the paper on the center of baked cake and dust it with powdered sugar.

Since the Middle Ages, people have walked from certain starting points across Europe to his tomb along pilgrimage routes that have become known as CAMINO DE SANTIAGO (translated from Spanish= the way to St. James).

Saint James the Greater was one of the twelve apostles of Jesus and the brother of St. John the Evangelist (Mark 1:19-20).  , Along with the Apostle Peter, James and John were part of Jesus’ “inner circle,” witnessing key events that the other apostles did not witness. After James was martyred, legend places his remains in Spain, where they are supposedly enshrined in a cathedral known as the  CATHEDRAL OF SANTIAGO DE COMPOSTELA. 

The  COMPOSTELA  is the document that certifies that a pilgrim has completed the Camino de Santiago. The Compostela is awarded by the Church authorities.
