I remember in Romania falls in  my childhood were full of apples, italian prunes, grapes and watermelons....
When Grapes were  available on fruit stands,,,, I knew fall is here and .....school will start soon! My mom use to make a lot of desert with apples, the one we  picked  from neighborhood orchards!
One of these deserts was apple cake that my mother always insisted that it is GERMAN apple cake....I was surprises to find in this blog/site KITCHME exactly named so!!!
Yesterday my grandson and I we made these recipe and everyone love it!

My NOTE! I added crumbled walnuts on half of the cake, I was not sure everybody like it!

Ingredients: (serves 24)
  • 2 eggs
  • 1 cup vegetable oil
  •         1cup white sugar (not 2)
  • 2 teaspoons (tsp) ground cinnamon
  • 12 tsp salt
  • 1 tsp vanilla extract
  • 2 cup all-purpose flour
  • 1 tsp baking soda
  • 4 cup apple, peeled, cored, and diced

No bake, Layered Apple Cream Cheese CAKE

I found this recipe in a wonderful romanian blog,

and it had a wonderful picture that I can’t resist!!! I am not very fond of cream cheese deserts, but this one having heavy cream and caramelized apple and caramel sauce….I thought it is divine and I have to try!

 I have changed a little the amount of sugar and gelatin from Laura's recipe, to adept for my grandson needs and I made it 2 times to make sure it is good.... my grandson approved! that's it!!

  • 4 tablespoons  melted butter  (50g)
  • 1cups any biscuit crumbs (100g)
  • 4 lbs fresh apples ( about 3 lbs pealed and sliced) (1.8kg)
  • 2 tablespoons of sugar
  • 4 tablespoons coarsely chopped walnuts
  • 2 tablespoons of raisins  
  • 1/2 teaspoon cinnamon powder
  • 2 cups cream cheese(400g,Philadelphia, mascarpone, labneh)
  • 2 cups heavy whipping cream (200ml)
  • 1  orange for zest
  • 2 teaspoon of vanilla extract
  •   gelatin, one package (7g)
For topping, Boby's Flay salted caramel sauce ,  (recipe follow)
  • 1 cup sugar
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter, at room temperature
  • ¾ teaspoon fleur de sel or other coarse sea salt

The best recipe is the Martha Stewart one. 
I didn't know how to roast a turkey. Every year we all went to my mother's for Thanksgiving, turkey, staffing, mushed potatoes, green beans, sweet potatoes pie (i learn from my neighbor), apple pie, pumpkin pie, and so on!
I roasted many times chickens! I roasted a whole pork leg every Christmas, I roasted a whole lamb leg...... but, NEVER  a turkey!
I try few recipes from blogs, internet, books, but I was not happy until i found Martha's recipe. There is a video, there is a stuffing recipe, there is how to cut a turkey! Wonderful !

1 20- to 21-pound fresh whole turkey, giblets and neck removed from cavity and reserved
1 1/2 cups unsalted butter (3 sticks), melted, plus 4 tablespoons unsalted butter at room temperature
1 bottle dry white wine
2 teaspoons salt
2 teaspoons freshly ground pepper

1 cup dry red or white wine for gravy (optional)

I was looking for this kind of recipe for quite a while…. There are many recipes in internet, French, Romanian,  British, Americans, …. but I find this romanian recipe that I like it because has  ONLY yolks, sugar, gelatin and whipped cream. No cheese, no milk, no other ingredients…
It is published by Gina Braga, in her romanian  blog,

For the cream:

-8 yolks
-2 lb of  heavy cream (for whipped cream)
- about 3 packs of gelatin (20g)
-1 cup sugar  
-1 dash salt 
-1 vanilla pod ,  OR/ 2 teaspoons essence 

For decoration:

-2 oranges ( thin slices, no rind)
-1 large compote of pineapple rounds
-other fruit: kiwi, cherry, strawberries, raspberries  
-1 thin Sheet cake /OR 300g  lady fingers

Turkish Abagannuc in Florida (HAKAN’s Baba Ghanoush)

Last week I had the pleasure to meet HAKAN and his beautiful wife and their children. They are turks and lately live in Romania.

  We were invited to our friends who came from Romania for summer vacation. Hakan and his family came with them…..summer vacation, for all…..

When I enter in the house I see Hakan at the huge outside kitchen , all involved in grilling, drinking, speaking…. I feel I am at the right place… I remember in Romania, as a child  in summers, waking on streets…..  smelling eggplant  burning on the grill…. bring so loving memory for me….

  Entering into my friends house, in Florida, Hakan on the terrace,  nursing a grill and a beer had  peppers, onion, tomatoes….beside a lot of eggplants… on the grill…Wonderfull smell that is attracting you there…. 
The children were happy, shouting and jumping in a enormous infinity pool, right on left of the terrace!

Hakan said is making for all of us, Baba Ghanoush! Wonderful! I was thinking!!!!.... real  Baba Ghanoush by a turk, from Turkey in Florida!! I was preparing for a real treat.

I have seen all the vegetables on grill, I was thinking he is going to make a additional salad…. But NOOO! he cleaned, cut, mushed , all the grilled vegetable, together: tomatoes, colored peppers, few hot peppers, eggplant, making a tasteful mush….

easy, no bake, CHOCOLATE MOUSSE CAKE /tort spuma de ciocolată fără coacere/

I found this adorable video, in romanian, at utube. Cristina and her cute little boy  is telling us how to make this lovely desert.

I like it because was no bake and very easy to  prepare (about 20 minutes)  leave overnight in refrigerator, finishing and decorating next day.

800 ml heavy cream
28oz (800g)  morsels chocolate, as follow:
   18oz (520g) semi-sweet morsels chocolate
    10oz(280g) dark (at least 70% cocoa) morsels chocolate

200g  Oreos cookie or any biscuits =2 cups=7oz
100g  melted butter = 7 tablespoons

400g  semi-sweet chocolate =14oz
125g  dark chocolate           = 5oz
600ml Heavy Whipping Cream = 2cups and 1/2

100g semi-sweet chocolate = 4oz  
125g  dark chocolate          = 5oz
200ml Heavy Whipping Cream = 1cup 

4 tablespoon of sprinkles
 250g nice, ripped raspberry = 1/2 lb.
