  1. (starting video) PARTIAL MANY LONG SLICES, STUFFED IN-BETWEEN


  1. cut partial  long slices, up to stem, salt and rinse.
  2. in between, add  slices of mozzarella and tomatoes.
  3. mix parsley, garlic (minced) and put all over.
  4. 350F, 50 min



2. (one minute mark) LONG SLICED IN TWO. 


  1. cut eggplant in two, long.
  2. each half cut not deep, many long cuts.
  3. alternate ham and cheese into these long cuts.
  4. mince basil, garlic, and mix with salt, pepper and bread crumbs and oil.
  5. Put all over eggplant.
  6. 350F, 30 min


3. (2 minutes mark) PARTIAL ONE LONG SLICE AND STUFF


  1. One long  cut in  2 eggplants.
  2. ground meat, mix with cut tomatoes, onion, peppers and salt, pepper, paprika, cumin, oil.
  3. stuff eggplant
  4. oil sauté onion, add fresh rosemary, add tomato sauce, salt, pepper
  5. Put stuffed eggplants and boil slowly, 25 min. 


4. (3.30 minutes mark) SMALL HARMONICA ON MASHED POTATOES.


  1. make mashed potatoes with butter and milk, put on a round oven dish.
  2. cut eggplant, partial round slices 
  3. ground meat mix with parsley, salt, pepper, bread crumbs.
  4. stuff meat mixer in-between slices, looking as harmonica.
  5. put these small harmonica over mashed potatoes.
  6. add tomato sauce, all over.
  7. add grated cheese.
  8. 325F, 30 min.


5. (5.10 minutes mark) EGGPLANT /OR ZUCCHINI/ ROLL


  1. slice eggplant long and grill it.
  2. on parchment paper put grilled slices one over other as a sheet.
  3. ground meat, mix with egg, parsley, salt, pepper, bread crumbs.
  4. put meat all over slices.
  5. add ham slices.
  6. add cheese slices.
  7. roll all. helping with parchment paper.
  8. 350F, 20 min.

6. (6.33 minutes mark) PARTIALLY  ROUND SLICED EGGPLANT STUFFED  WITH PESTO, TOMATOES, MOZZARELLA, HAM


  1. cut not all way, eggplant 1/2 inch, round slices.
  2. use a brush to smear pesto, each slice.
  3. use tomato slice, mozzarella slice and ham slice to stuff in between eggplant slices.
  4. spray with olive oil.
  5. oven 350F, for 45 minutes.



7. (7.7 minutes mark)  EGGPLANT - SCOOPED AND STUFFED


  1. cut eggplant in two, longitudinal.
  2. each half cut in cubes, scoop out.
  3. sauté onion, eggplant cubes, garlic for few minutes.
  4. add ground meat, stir for few minutes.
  5. add oregano, salt and pepper.
  6. add olives, pitted.
  7. add tomato paste.
  8. sauté  everything for few more minutes.
  9. Fill up each half eggplant with meat and spices.
  10. put  feta (crumble) all over of stuffed eggplant.  
  11. 350F, 10 minutes in oven (my experience, 30 minutes, covered)
  12. serve with tzatziki  sauce (or sour cream).


8. (8.20 minutes mark) UPSIDE DOWN RICE EGGPLANT BOMB
