SOURDOUGH DISCARD, some recipes ideas
Once You started maintaining sourdough, You have a big job!
The sourdough bread is absolutely wonderful, but You keep discarding constantly sourdough, in order to maintain a healthy culture.
These are some ideas on what to do with 1 cup of discarded sourdough!
King Arthur Flour Company in Norwich Vermont, where I had a wonderful lesson about sourdough, helped me to have some ideas, using these cups of discarded sourdough.
POPOVERS

Ingredients:
1 cup milk
3 large eggs
1/2 cup sourdough starter, fed or unfed
3/4 teaspoon salt
1 cup Unbleached All-Purpose Flour

ENGLISH MUFFINS

PIZZA CRUST

- 1 cup (227g) sourdough starter, unfed/discard
- 1/2 cup + 2 tablespoons to 3/4 cup (141g to 170g) lukewarm water
- 2 1/2 cups (300g) unbleached all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon dry yeast

PRETZELS

3/4 cup lukewarm water*
1 cup unfed sourdough starter, straight from the refrigerator (or use a fed starter if you like)
3 cups Sir Lancelot Unbleached Hi-Gluten Flour* or King Arthur Unbleached All-Purpose Flour
1/4 cup Baker’s Special Dry Milk or nonfat dry milk
2 tablespoons (1/2 ounce) malt powder or 1 tablespoon sugar
1 tablespoon butter or vegetable oil
1 1/2 teaspoons salt
2 teaspoons instant yeast
*Add an additional 2 tablespoons of water if you’re using high-gluten Lancelot flour.]

INGREDIENTS:
1½ cups + 1 tbsp (250 grams) white bread flour
1/3 cup (100 grams) sourdough starter or sourdough discard
3/4 cup (175ml) water
2 teaspoons salt
Italian herb mix (I buy mine in a jar)
