SOURDOUGH DISCARD, some recipes ideas

 






  Once You started maintaining sourdough, You have a big job!

  The sourdough bread is absolutely wonderful, but You keep discarding constantly sourdough, in order to maintain a healthy culture. 


  These are some ideas on what to do with 1 cup of discarded sourdough!


   King Arthur Flour Company in Norwich Vermont, where I had a wonderful lesson about sourdough, helped me to have some ideas, using these cups of discarded sourdough. 














POPOVERS

BAKE AT  450F, 15 minutes

 Ingredients:

    1 cup milk  

    3 large eggs

    1/2 cup sourdough starter, fed or unfed

    3/4 teaspoon salt

PIZZA CRUST

  •          1 cup (227g) sourdough starter, unfed/discard
  • 1/2 cup + 2 tablespoons to 3/4 cup (141g to 170g) lukewarm water
  • 2 1/2 cups (300g) unbleached all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon dry yeast

PRETZELS

 Ingredients:

3/4 cup lukewarm water 

1 cup unfed sourdough starter, straight from the refrigerator  

3 cups  King Arthur Unbleached All-Purpose Flour

1/4 cup  Dry Milk or nonfat dry milk

2 tablespoons (1/2 ounce) malt powder or 1 tablespoon sugar

1 tablespoon butter or vegetable oil

1 1/2 teaspoons salt

2 teaspoons instant yeast

PANCAKES - WAFFLES

Overnight sponge

Batter

  • all of the overnight sponge
  • 2 large eggs
  • 1/4 cup (50g) vegetable oil or 4 tablespoons (57g) butter, melted
  • 1 teaspoon baking soda
  • 3/4 teaspoon table salt

    50 g – 100active sourdough starter,  

  • 10 g (2.5 teaspoons) kosher salt
  • 430 – 440 g water (1.75 cups  , room temperature )
  • 512 g (about 4 cups) bread flour 
  • 3 tablespoons extra-virgin olive oil,  
  • Nice, flaky sea salt, such as Maldon
