SWEET POTATO CASSEROLE with pineapple and marshmallow

I chose it from many search, because is easy to follow and it is what I had in mind, as ingredients. 

PREP TIME=10 min

COOK TIME=30+2 minutes



  • 1 (40 ounce)  microwaved OR can cooked yams, drained
  • ¼ cup unsalted butter, melted
  • ¼ cup brown sugar
  • 1 egg, beaten
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup crushed pineapple, drained
  • 8 ounces large marshmallows, cut in half
  • ¼ cup chopped pecans
  • 1/2 teaspoon pumpkin pie spices

  • Preheat the oven to 350 degrees F.

  • Spray a 1-quart baking dish with cooking spray and set aside.

  •  Microwave sweet potato, scoop and mash with a potato masher or a fork.

  •  Add all ingredients and mix well.

  •  Spread the mash evenly in the prepared baking dish.

  •   Bake 30 minutes at 350F.

  •   Add marshmallow and chopped pecan.

  •   Turn on the oven broiler and return the dish to the upper middle rack. Broil for 1 to 2 minutes, or until marshmallows are lightly browned.
