APPLE (AMERICAN) PIE
The best apple pie recipe, from many, that I tried is the one from Martha Stewart.

INGREDIENTS:
- 2 Handmade pastry sheets, Martha's best pie crust, (= Pâte brisée )
- 3 pounds apples such as Rome, Cortland, or Granny Smith, or a combination, peeled, cored, and cut into 3/4-inch wedges (about 8 cups)
- 3 tablespoons all-purpose flour, plus more for dusting
- 1/2 cup sugar, plus more for sprinkling
- 1/2 to 3/4 teaspoon ground spices (combination of cinnamon, ginger, allspice, nutmeg, and clove)
- 1 tablespoon freshly squeezed lemon juice (or orange juice)
- 1 teaspoon grated lemon zest (or orange zest), optional
- Pinch of salt
- 2 tablespoons unsalted butter, cut into pieces
- 2 tablespoons heavy cream
Preheat oven to 400F.
Roll one sheet of pastry dough 12inches. Fit on 9 inches lightly floured pie pan.
Refrigerate.
In a bowl combine apples, sugar, flour, spices, lemon juice, zest, and salt; toss to combine.
Put this mixer into the prepared pie crust. Dot with butter.
Roll the second disc of dough into a 12-inch round. Fit dough over fruit. Cut a few vents on the top dough and pinch on the margins with your thumb and forefinger.
Brush the crust with heavy cream, and sprinkle with sugar.
Refrigerate.
Bake at 400F, 45-60 minutes, until the dough, is nicely brown all over and bubbly through vents.
Leave to cool down an hour, before You serve.

Hi, This is the best apple pie. I didn't like American Apple pie, because the dough is wet on the bottom and it is too dry on top. I tried many recipes, because I love any dessert with apple. In fall, apples are so juicy and picked up fresh from the tree, are so good!
